This Broken Wheat Dosa is a good alternative for our regular rava dosa and tastes like the same or ever better. All ingredients are more healthier when compared to our regular rava dosa. I am very sure that if you try this Broken Wheat Dosa once, then it will become one of your usual tiffin items. It takes hardly 15 to 20 minutes to prepare. So this is a good option when you have no idly/ dosa batter at home. Make this delicious, hotel like instant wheat rava dosa at home and enjoy.

Ingredients

  1. Broken Wheat – 1 cup
  2. Wheat Flour – 2 cup
  3. Rice Flour – ¼ cup 
  4. Salt – to taste
  5. Cumin Seeds – 1 teaspoon
  6. Onion – 1 (finely chopped)
  7. Asafetida – ½ teaspoon
  8. Curry leaves – few

How to make Broken Wheat Dosa?

  • Soak Broken wheat/ Samba rava/ Dalia in hot water for 15 minutes.
  • With this soaked Broken wheat/ Samba rava/ Dalia, add wheat flour, rice flour, cumin seeds, fined chopped onion, asafetida and chopped curry leaves.  Add salt to taste. 
  • Add required amount of water and mix them well together to a watery pouring consistency like normal rava dosa.
  • Heat dosa tawa/ pan/ iron dosa tawa and pour dosa mixture little by little around tawa. You could not spread  dosa like we do for normal dosa. Pour like the same way we do for usual rava dosa.
  • Spread oil and cook in a low to medium flame.
  • After one side got cooked then flip over and cook for 3 seconds. 
  • Now your crispy healthy Broken Wheat/ Samba Rava/ Dalia Dosa is ready.  Serve it with chutney or sambar of your choice.

Soak 1 cup of broken wheat in 1 cup of hot water for 15 minutes. Let it cool completely. Then add all ingredients into it.
Make a thin batter by adding required quantity of water. Spread on a hot dosa tawa. Sprinkle oil and cook in medium flame.

Tips

1. Soaking of broken wheat for 15 minutes in hot water is must otherwise the dosas will be chewy.
2. Mix batter to thin watery consistency like the same way as you do for normal rava dosa.
3. If you are an expert in making normal rava dosa then it is very similar here after.

Pre-Preparations

  1. Take Broken Wheat in a bowl and pour equal quantity of hot water into it. Add water till broken wheat absorbs. Let it cool to room temperature.

  2. In a mixing bowl, add rice flour, wheat flour and water. Don’t mix immediately. Leave it aside for 5 minutes. After 5 minutes mix it with a whisk. Ensure that no dry flour left. Keep it aside.

  3. Chop onions, curry leaves and green chili finely. Crush pepper into one and half.

Preparing Batter

  1. In a large mixing bowl, add rice flour and wheat flour mixture, soaked broken wheat, all the remaining ingredients. Mix well with a whisk. Adjust salt and water.

    Adjust consistency till pouring. The same consistency like normal rava dosa. Neither too thin not too thick.

Making Broken Wheat Dosa

  1. Heat dosa tawa to smoky. Sprinkle some water and wipe with a cotton kitchen towel. Spray some oil and wipe. Now our tawa is ready.

  2. Take a ladle of batter and spread to form circle from the rim. Since our batter is thin, it will spread to the center to form dosa. If you have a flat tawa, swirl it to form dosa. Spread batter to form a thin layer on the tawa.

  3. Spray some oil on the dosa. Let the dosa cook till crispy in a medium low flame. Transfer it to a plate. Then spray few drops of water on the tawa and wipe with a clean cloth. Now the tawa is ready for next dosa.

    Before preparing each dosa, spray few drops of water and wipe the tawa. If the tawa is too hot or with excess oil, dosa will not spread well.
  4. Now it is time to enjoy our crispy Broken Wheat Dosa with our favorite choice of chuyney or sambar.
