Poori Masala
Poori masala is an iconic south Indian accompaniment for puffy poories. The preparation method varies slightly through the regions. Also, restaurants use their own style and give their uniqueness punch.
At home we change style to adjust quantity and to increase the number of serves. Sometimes to confine with available ingredients.

With minimal ingredients, this poori masala is a more special one. Try this recipe at home once then you pick this style as your default poori masala.
Ingredients and Substitutions
Peas – I use dried yellow peas. You may replace it with fresh green peas in season. Or with a green dried one. Time to cook the peas differ according to the variety we use.
Potato – Potato is the main ingredient of any variety of south Indian poori masala. I use the normal potatoes. You may replace it with baby potatoes.
Onion – Onion decides the taste of poori masala.
Tomato – I use tomatoes to give a slight tanginess to the masala. But you may skip it. That also tastes good and different.
Garlic – I use chopped garlic to give a flavour punch. You may use ginger-garlic paste or chopped ginger.
Green Chillies – Green chillies are the only spiciness to the masala. This also decides the taste of the masala.
Seasoning – Bay leaves, Cinnamon, Clove, Sha Jeera and Stone Flower. You may skip or add one or two as per your taste.
Garnishing – Curry leaves and coriander leaves add nice aroma to the poori masala.

How to make Potato-Peas Poori Masala?
Cook Peas and Potatoes till soft. If you use fresh green peas then add it while sauteing onions. If you use a soaked dried peas then pressure cook till soft.
Heat oil in a pan. Add all the seasoning ingredients and let it fry for a second. Then add chopped onions and garlic. Saute till light brown.

Now add chopped tomatoes and saute till mushy.

Then add cooked peas and potato pieces. Add salt to taste. Mash some potato pieces to make the masala thick. Mix well and let it simmer till required consistency.

If you want a creamy loose gravy like consistency then add 1 teaspoon of besan flour with ¼ cup of water. Add this to the boiling masala and let it thicken.

Once it is done, garnish with chopped curry leaves and coriander leaves. Enjoy with hot puffy poories. This poori masala accompany well with chapatis or with dosas also.
