5-minutes Instant Aval Puttu

Aval Puttu is a traditional South Indian dish made from flattened rice (aval/poha). It is commonly made as a sweet and one of the famous offerings during Navratri. Because it is simple, wholesome and also quick to make snack.

My version of aval puttu is a no sugar Breakfast/ Snack. Beaten Rice or Flattened Rice is nothing but the flattened dried- parboiled rice. So, it is a quick-cooking ingredient.

Preparing breakfast or snack out of it, is just a 5-minute process similar to the preparation of instant noodles. We may enjoy this puttu simply with a pappadam or with wafers or with any traditional sides like kadala curry, pazham-payaru-pappadam etc.

I tried this recipe on my day of fasting. As it was such an easy and simple process, I included this to my instant tiffin recipes list.

I tried this puttu with Mappilai Samba Aval, which is one of the traditional rice varieties and having lots of health benefits. Including such a nutritious ingredient with a favourite recipe is a jackpot.

We may try the same recipe with any flattened rice/ beaten rice/ flattened millets. Let’s check out the ingredients and recipe.

Ingredients and Substitutions

Mappillai Samba Aval – I used mappillai samba (also called as Bridegroom Rice or traditional red rice). It may be alternated with any flattened rice or with any flattened millet.

Coconut – Grated coconut is the only sweetener of this recipe. As coconut is very healthy, I use this to give a nice sweetness to the puttu.

Salt – Salt is added for taste.

Water – I used plain hot water to combine the puttu. But we may use any plant based milk or cow milk.

Cashews – I use broken cashews to give a nice crunchiness to the puttu. We may also use any of our favourite nuts.

Ghee – I used ghee to roast cashews and to give a nice aroma to the puttu.

How to make Instant Aval Puttu?

Dry roast aval/ poha/ beaten rice till crisp. Leave it to cool.

Take this roasted beaten rice in a mixer jar and grind it to a slightly coarse powder. Keep it aside.

Heat water in a kettle or sauce pan. In the meantime, heat ghee in a pan. Keep the flame to low. Roast broken cashews till light golden.

Now add grounded beaten rice powder and mix well. Turn off the stove.

Now add the hot boiling water to this mix little by little and mix. Initially, the mix looks slightly watery but it will be absorbed in 5 minutes. Quantity of water vary according to the age of the rice, from which the poha is made. It generally ranges between 1 to 1.5 cups of water for 1 cup of poha powder.

If the puttu is chewy then add a little more water. If it is soft then this is the right texture. Now add grated coconut and give a good mix.
