Broken Wheat Biryani
Biryani is nothing but a variety of upma, a famous tiffin recipe across south India. But biryani is generally cooked with Basmati rice or with seraga samba rice. As these are fine grains and the texture of biryani is so good with this rice varieties.
Cooking rice to the right stage is the main part of biryani. That is, the biryani rice should be non-sticky or mushy yet cooked right. Broken wheat is not become mushy easily so it is easy to bring right texture of Biryani. In this blog, I shared an easy to make and freshers friendly biryani recipe.

This Vegetable Biryani with Broken wheat is our favorite and special yet prepared on any busy or lazy day. Because it needs only the chopping of vegies. No dum cooking or big biryani pot cooking. Just take a pressure cooker and do it in 20 minutes. That is it!
Ingredients
- Broken Wheat – 1 cup
- Carrot – 1 (medium size)
- Beans – 5 nos.
- Green Peas – ¼ cup
- Onion – 1 (large)
- Tomato – 1 (small)
- Ginger-Garlic Paste – 1 teaspoon
- Curd – 1 teaspoon
- Lemon Juice – 1 teaspoon
- Water – 3 cups
- Cashew Nuts – 5
- Bay Leaf – 1
- Cinnamon – 2 inch piece
- Cloves – 1
- Kalpasi – 1inch piece
- Cardamom – 1
- Cooking Oil – 3 tablespoons
- Mint leaves and Coriander leaves – few

How to make Broken Wheat Biryani?
Heat oil in a pressure cooker. Once it becomes hot, add bay leaf, cinnamon, cloves, cardamom and Kalpasi.

After 2 seconds, add green chilies and sliced onions. Saute for a minute.

Now add (finely chopped) carrot, (finely chopped) beans and green peas. Saute for 1 minute.

Now add ginger-garlic paste and saute for 1 minute. Then add mint leaves and coriander leaves. Mix well.Then add finely chopped tomatoes and saute till mushy.

Now add Chili powder and mix well. Then add curd and mix well. Let the oil separates. Add water and bring it to boil. Add salt to taste.

When the water starts boiling add broken wheat/ samba rava/ wheat dalia and mix well. Now add lemon juice and mix.

Cover the pressure cooker with lid and cook for 2 whistles in low flame. Leave it till the pressure gets released by itself.

Tips
- Saute vegetables till they cook 75% in oil. The remaining cooking will be done all together after adding broken wheat.
- Don’t add too much of tomatos (1 small tomato is enough); the tangy taste will dominate otherwise.
