Coconut Roti

Roti / Chapati is an easy to make tiffin which we make almost every day.   This is a traditional Sri Lankan recipe. Famously known as Coconut Roti or Pol Roti. I have shared this Coconut Roti which will become your kids favorite one.  So try this and make your kid happy!

Health Benefits of Wheat

Wheat flour is our all time helping ingredient because we make variety of tiffin items out of it.  As wheat is diabetic friendly we may try more varieties from it which also tastes delicious.  Coconut is not only a taste enhancer to almost every south Indian poriyals and currys but also a healthy one.  Lets try a simple, Kids’ favorite chapati out of these ingredients together.

We generally make many varieties of stuffed chapattis/ parathas like Aloo paratha, Mooli paratha, Gobi paratha etc.  Here is an easy as well as tasty variety of chapatti which stays soft for hours.  A suitable lunch box recipe for chapatti loving kids.  

Mix wheat flour & grated coconut together and knead well as we do for normal chapatis.  You could adjust the quantity of coconut. Leave the dough for at least 15 minutes.  Make chapatis and use butter or ghee if you like. 

It is a traditional Sri Lankan roti which they accompany with a Sambal. But we could serve with any curry/ kurma or simply with a teaspoon of jaggery.

Ingredients:

  1. Wheat Flour – 1 cup
  2. Grated Coconut – ½ cup to 1 cup
  3. Sugar – ½ teaspoon
  4. Salt – to taste
  5. Ghee – 1 teaspoon  

How to make Sri Lankan Coconut Roti?

Take wheat flour, grated coconut, ghee, sugar and salt in a mixing bowl.  Mix well before adding water.

Knead just as you do for chapatti dough.  Leave it for 15 minutes.

Divide the dough into small balls. Take one ball and make chapatti.  Adjust the size as you need.

Add ghee or oil of your choice and cook till the chapati will be cooked well & brown spots will appear on both sides.

You may serve it plain or with tomato sauce or with the traditional sambal.

Tip

1. Adding ghee will give a nice flavour and soft chapattis so don’t skip it.
2. Adding pinches of sugar will enhance the taste of the chapatis/ rotis.  You may skip if you don’t like.

  1. Take all ingredients in a bowl and mix well. Knead well by adding water little by little just as we do for chapati dough. Leave it for 15 minutes.

  2. Take small balls and make chapatis. Cook it just like our usual chapatis.

Note

A simple variation of our usual chapatis which our kids will love a lot.
