
Frittata Sandwich is a simple breakfast/ brunch or dinner. With any kind of bread (whether it is whole wheat, white or sourdough) and a rich frittata together with our choices of enhancements like toasting, grilling etc., this sandwich becomes a whole some treat.

I have prepared whole wheat bread at home and set this frittata sandwich. On lazy days, eat as a plain one; On special days, spice it up with sauces and cheeses with toasted breads.
Frittata is an Italian egg-based dish, similar to an omelette. It's further enhanced with ingredients like meats, cheeses, or vegetables.
Cooking techniques ranges over traditions and contemporary; Stove top to broiler to ovens. Easier and quicker ones always win the list.
We make frittatas with chicken, mutton, fish or prawns etc. Or with fresh vegetables. Add cheesy spreads to make our frittata richer and more delicious.
Using toasted breads also enhance the taste of the sandwich.Â
Bread slices â I use homemade whole wheat breads. At times I use store bought sandwich breads, sourdough breads or homemade millet breads.Â
Eggs â I use eggs to make frittata.
Vegetables â I use onion, tomato and capsicum to make veg frittata. But we use chicken, mutton, fish or prawns - which are marinated and cooked.
Salt â Salt is added for seasoning.

Spices â I use pepper-cumin powder sometimes. Chili powder, crushed coriander seeds, crushed roasted fennel at times. Oregano, if I want a cheat pizza. You are free to use your favourite spices or combinations.  Or simply end up with finely chopped or crushed green chilies.
Oil â For sautéing, I use olive oil. But we may use any cooking oil we prefer.
Butter â I use plain butter for toasting bread slices in a tawa. But we may use flavoured ones like garlic butter, chili oil etc.
In a blender take whole wheat flour and instant yeast. Mix it for 2 to 3 seconds. Then add salt and water (or milk). Let everything blend to get a slightly lose and sticky dough. Grease a bread loaf and transfer the dough into the loaf. Cover tightly and leave it to double (1 hour approx.). After the dough raised double, bake it. Then make bread slices.

Chop onion, tomato and capsicum finely. If you use meat, then marinate and cook. Keep it aside.

In a mixing bowl, whisk eggs with your choice of spices. Keep it aside.

Heat oil in a pan and add onion. Saute till translucent then add capsicum. Saute for 1 minute. Then add tomato and saute for a minute.Â

Place tomato pieces at the bottom of the pan.  Now pour, whisked egg and cook covered till it sets well. Cook in low flame to avoid burning at the bottom. Add some cheese on top when remove from flame. Let the cheese melts in the heat of cooked egg-vegie layer.

Or, add the sauteed vegetables to the whisked egg and mix. Adjust salt and spice to taste. I add some grated cheese, cubed paneer and a quarter cup of milk at this time. I spiced up with oregano.


Heat a pan and grease it with oil. Pour the egg-vegetable mixer. Cook in a low flame till it sets well. Or, pour the egg-vegies mix in a greased pan and bake till set.

Our frittata is ready now.

Toast bread slices if you want a toasted frittata sandwich. Else, use plain bread slices. If you use flavored oils while toasting bread slices, it will enhance the taste of the sandwich.

Place one bread slice and a piece of frittata on it. Spread some tomato sauce or sweet dates chutney or chili crisp or chili oil or hot honey or tahini sauce etc. Â
Now add some grated cheese or cheese sheet on top of it. If you already added cheese on top of frittata then skip it now.

Then place another bread slice on top.  Cut into pieces. Enjoy your delicious frittata sandwich.
