Millet Kozhukattai is one of instant tiffin recipes. We prepare this kozhukattai in hardly 15 to 20 minutes. It is a healthy, delicious yet easy to cook breakfast/ snack recipe. It is a perfect lunch box as well as snack recipe for Kids.

I use the general term millet rather one particular millet name. Because the same procedure will work for others also. I make this kozhukattai with Brown top millet.
I pre-process the millet and make millet rava in large quantity. Then it takes only 15 minutes to make any breakfast/ snack out of it.

Browntop millet (also called Signal grass or Brachiaria ramosa) is one of the lesser-known but highly nutritious millets. Like any other millet, It’s rich in fiber, iron, and antioxidants; it has a low glycemic index; Gluten free —making it an excellent pick for breakfast.
Instant Millet Kozhukattai
Millet kozhukattai or millet upma kozhukattai is a very common breakfast/snack made from millets. But my recipe slightly differs from others which makes it easier.
I prefer making this upma kozhukattai rather upma. Because it is tastier than upma and easier to digest. It is a perfect option for those who are newly entering the millet diet. Because millets make digestion problems when not cooked properly.
I made millet upma rava in bulk and prepare this kozhukattai while making my tea. Yes! It is that easy.
Ingredients and Substitutions
Brown top Millet – I used brown top millet but may use barnyard, kodo, little, proso or foxtail millet.
Coconut – Grated coconut is the unique flavour of this kozhukattai.
Cashews – I use cashews to give a nice crunch in the kozhukattai. But we use urad dal or channa dal instead.
Red chili – Red chili is used to spice up the recipe and to leave a smoky hot flavour.
Seasoning – Mustard seeds, Asafoetida, Curry leaves are used for seasoning.
Pre-Processing Millets
Wash millets thoroughly till you get clear water. Drain it in a sieve for a while.

Heat a wide pan and roast this washed millet till a nice aroma, 1 cup at a time. Leave it to cool.

Once it gets cooled, pulse it in a mixer jar to rava texture not too fine. As millets are already smaller in size, just 1 to 2 pulses are enough. Now our millet upma rava is ready.

Store this millet rava in a dry, air tight container and use it when needed.
How to make Instant Millet Kozhukattai?
Heat oil and ghee (optional) in a pan. Add mustard seeds and broken red chilies. Let the mustard seeds splutter.

Now add curry leaves, asafoetida and grated coconut. Sauté for 30 second in low flame. Add hot water into it. Add salt to taste. Let the water boils well.

Now add millet upma rava and mix well. Cover it with a lid and let it cook for 10 minutes in low flame.

Leave the millet upma to cool for 5 minutes. In the meanwhile, heat water for steaming.
Now make kozhukattai or balls from the millet upma. Place the kozhukattai/ balls in a steamer plate and steam for 7 to 10 minutes in low flame.

Now our millet kozhukattai is ready to enjoy. No accompaniment is needed but you may serve with your favourite chutney.
Tips
To make this millet kozhukattai even more healthier, you may add vegetables while sauteing.
