About Broken Wheat Dosa
This Broken Wheat Dosa is a good alternative for our regular rava dosa and tastes like the same or even better. All ingredients are more healthier when compared to our regular rava dosa. I am very sure that if you try this Broken Wheat Dosa once, then it will become one of your usual tiffin items. It takes hardly 15 to 20 minutes to prepare. So this is a good option when you have no idly/ dosa batter at home. Make this delicious, hotel like crispy dosa at home and enjoy.
Ingredients
- Broken Wheat - Broken Wheat is the main ingredient and this may be replaced with Corn Rava, Rice Rava or with usual semolina. Soaking time will change accordingly.
- Wheat Flour - Wheat Flour is the binding agent of this recipe. It may be substituted with maida (all purpose flour).
- Rice Flour - Rice flour is added to give a crispiness to the dosa.Â
- Salt - Salt is added for seasoning
- Cumin Seeds - Cumin seeds give a nice flavor and taste. Also, helps in digestion.
- Pepper - Pepper is added to give a slight spiciness.
- Onion - Onion is added to give a crunchy bite. While dosa roasts, the onion also roasts together in oil will give a delicious taste.
- Asafetida - Asafetida is added for seasoning.
- Curry leaves - Curry leaves will give a nice aroma and may be replaced with coriander leaves.
How to make Broken Wheat Dosa?
Soak Broken wheat/ Samba rava/ Dalia in hot water for 15 minutes.

Take wheat flour, rice flour, cumin seeds, fined chopped onion, asafetida, chopped curry leaves and salt in large mixing bowl and add water. Leave it for 5 minutes. After 5 minutes mix this with a whisk. Ensure that there are no lumps and dry flour.

Now add soaked broken wheat to this mix and combine well with a whisk. Adjust consistency till pouring with required quantity of water.

Heat dosa tawa to smoky. Sprinkle some water and wipe with a cotton kitchen towel. Spray some oil and wipe. Now our tawa is ready. Take a ladle of batter and spread to form circle from the rim. Since our batter is thin, it will spread to the center to form dosa. If you have a flat tawa, swirl it to form dosa. Spread batter to form a thin layer on the tawa.Â
Spray some oil on the dosa. Let the dosa cook till crispy in a medium low flame.  Transfer it to a plate. Then spray few drops of water on the tawa and wipe with a clean cloth. Now the tawa is ready for next dosa.

Tips
Soaking of broken wheat for 15 minutes in hot water is must otherwise the dosas will be chewy. Mix batter to thin watery consistency like the same way as we do for normal rava dosa.
