Millet Puttu is one of instant tiffin recipes. We prepare this puttu in hardly 15 to 20 minutes. It is a healthy, delicious yet easy to cook breakfast/ dinner recipe.

This millet puttu is a healthier twist to our traditional puttu. As each millet has its unique flavor and taste, puttu made out of millets taste amazing.
I use the general term millet rather one particular millet name. Because the same procedure will work for others also. I make this puttu with little millet.
I pre-process the millet and make millet puttu podi in large quantity. Then it takes only 15 minutes to make puttu out of it.

Little Millet is one of the positive millets. Like any other millet, it’s rich in fiber, iron, and antioxidants; it has a low glycemic index; Gluten free —making it an excellent pick for breakfast.
Instant Millet Puttu
Millet puttu is not a very common breakfast/snack made from millets. But my recipe slightly differs from others which makes it easier and tastier.
This millet puttu is a good to go puttu option. Because it makes us enjoy our favourite food healthier than ever. If we prepare this millet puttu podi once and store then it needs only 15 minutes to cook the puttu. Yes! It is that easy.
Ingredients and Substitutions
Little Millet – I used little millet but may use barnyard, kodo, brown top, proso or foxtail millet.
Coconut – Grated coconut is the unique flavour of this puttu.
Salt – Salt is added for seasoning.
Water – I use water to mix puttu.
Making Millet Puttu Podi
Wash millets thoroughly till you get clear water. Drain it in a sieve for a while.

Heat a wide pan and roast this washed millet till a nice aroma, 1 cup at a time. Leave it to cool.

Once it gets cooled, pulse it in a mixer jar to slightly coarse puttu podi texture not too fine not too coarse. As millets are already smaller in size, just 3 to 4 seconds are enough. Now our millet puttu podi is ready.
Store this millet puttu podi in a dry, air tight container and use it when needed.
How to make Instant Millet Puttu?
Take millet puttu podi in a mixing bowl. Add salt and mix. Now add water (1:1) to the puttu podi. Mix well and leave it for 10 minutes. The puttu podi will absorb water and becomes moist and crumble like wet sand.

Take a puttu kuzhal, fill alternate layers of grated coconut and millet puttu mixture. Cover with the lid.

Boil water to steam puttu. Steam this puttu for 10 minutes.

Transfer the steamed millet puttu onto a serving plate. Enjoy with the famous kadala curry or egg curry or with pazham-payaru-papadam.

Tips
For 1 cup of millet puttu podi, 1 cup of water is enough. Initially, it looks sticky but the puttu podi will absorb all water and becomes soft and crumble.
