Royal Falooda

Royal Falooda is a rich Indian dessert layered with rose syrup, flavoured milk, soaked basil seeds, jelly, sweetened noodles, ice creams, grated nuts and fruits. It is both refreshing and satisfying which makes it a perfect summer treat.

As we include rose syrup, ice creams and vermicelli, most of us avoid this delicious dessert or limit the number attempts. So, I tried various healthier versions of royal falooda and sharing this world’s healthiest ever royal falooda recipe here.

I prepared this no sugar falooda with only healthy ingredients. That is with fruits, nuts, curd, soaked seeds and Tragacanth gum. It sounds new but it is possible.

Ingredients and Substitutions

Whisked curd – I have taken home made whisked curd to replace flavored and sweetened milk in falooda. If you want a healthy sweetness then add a teaspoon of honey while whisking curd.

Thick set curd – Instead of adding store bought ice creams, I have used scoops of thick set curd. Or you may use homemade healthy ice creams.

Grated nuts – I took cashews, pistachios and almonds. You may choose Walnuts, Brazil nuts, Hazel nuts or Pecans also.

Grated fruits – I used grated fruits to replace sweetened vermicelli. Because vermicelli is made of refined flour. I used apple to give a nice crunch and papaya as it tastes sweet. You may use any fruit that tastes sweet not tangy or bitter.

Chopped Fruits – I used guava and orange. Because both are good for diabetics. You are free to use any fruit you want.

Soaked Tragacanth gum – Soaked tragacanth gum or gond katira is a natural cooler to the body and looks like jelly. As we are not adding any added sugar or jelly, we use this healthier jelly like gum.

Soaked seeds – I used sweet basil seeds, as it is very healthy and it is the special ingredient of faloodas. I used chia seeds also. You may use any one or both. There need not be any hesitance as both are very healthy.

How to make Probiotic Royal Falooda?

Boil 1 cup milk and let it cool to warm or room temperature. Add 1 teaspoon of curd and mix well. Let it set for 8 hours.

Boil 1 cup of milk and let it simmer to half cup. Let it cool to room temperature. Add crushed dry rose petals and cardamom powder and mix well. Now add 1 teaspoon of curd and mix well. Leave it to set for 8 hours.

After 8 hours keep both normal and thick curd in refrigerator.

Peel off sweet riped papaya and grate it like vermicelli. Peel off sweety apple and grate it too. Chop Guava to small pieces. Peel off sweety orange and take its pulp. Make sure that all fruits you have taken tastes sweet not tangy.

Whisk normal curd. If you like honey then add one teaspoon with this whisked curd. If you want to make a completely diabetic friendly falooda then skip honey.

Start setting falooda by adding grated vermicelli like papaya in the bottom layer. Then add 1 teaspoon of soaked gond katira.

Then add chopped guava and one more layer of grated papaya. Then add soaked sabja seeds and orange pulp one by one.

Then add one more layer with grated apple. Pour whisked curd and let it penetrate well. You may add your choice of fruits.

Finally, add 2 scoops of thick set curd and sprinkle grated nuts on top.

Tips

We may add a layer of grated nuts in between fruit layers. Add a teaspoon of whisked curd immediately after each layer so that it penetrates well. Use dry rose petals to garnish and enhance flavor. I added crushed rose petals while setting thick curd to give a slight flavor to the scoops. You may add a pinch of saffron to the warm milk before setting curd. This will give an amazing flavor to our falooda.
