Frittata Sandwich is a simple breakfast/ brunch or dinner. With any kind of bread and a rich frittata, make this wholesome breakfast sandwich.

Ingredients...

2 Slices Bread 2 number Eggs 1 cup Vegetables chopped 1/2 teaspoon Salt 1 sachet Oregano 1/2 teaspoon Oil 1 teaspoon Butter

Toast bread slices if you want a toasted sandwich. Else, use plain bread slices. Use flavored oils to toast to get most out of the sandwich.

Chop onion, tomato and capsicum finely. If you use meat, then marinate and cook.

Heat oil in a pan and add onion. Saute till translucent then add capsicum. Saute for 1 minute. Then add tomato and saute for a minute.

In a mixing bowl, whisk eggs with oregano.  Add the sauteed vegetables to the whisked egg and mix. Adjust salt and spice to taste.

Pour the egg-vegetable mixer in a heated tawa. Cook in low flame till it sets well. Or, pour the egg-vegies mix in a greased pan and bake till set.

Toast bread slices if you want a toasted sandwich. Else, use plain bread slices.

Place one bread slice and a piece of frittata on it. Spread some tomato sauce or sweet dates chutney or chili crisp or chili oil or hot honey or tahini sauce etc.  Then place another bread slice on top.  Cut into pieces. Enjoy your delicious frittata sandwich.
